Ingredients
1 cup light corn syrup
1 cup white sugar
1 1/2 cups peanut butter
6 cups crisp rice cereal
1/2 cup semisweet chocolate chips
1/2 cup butterscotch chips
Directions
Generously butter a 9x13 inch baking pan. Set aside.
In a large pot, mix together corn syrup, sugar, and peanut butter. Cook over medium heat, stirring until peanut butter melts. Bring mixture to a boil. Remove from heat, and stir in crisp rice cereal.
Transfer mixture into a well buttered 9x13 inch pan. With your hands well buttered, pat it down into pan.
In a medium saucepan, over medium low heat, melt chocolate chips and butterscotch chips until smooth. Spread over top of bars and let bars cool. Cut into squares.

Lemon No-Churn Ice Cream
1 T lemon zest
1/4 c lemon juice
1/8 t sea salt
1 c sugar
1 c heavy cream
1 c whole milk
Mix zest, juice, sea salt and sugar together. Add in cream and milk and stir until sugar is dissolved. Pour into a container and put into freezer. Once soft-set, stir and then return to freezer. Once completely frozen, scoop up and enjoy!

Christine - The Twilight Zone on Netflix, Creamy Italian Chicken for the Instant Pot (recipe below)
Creamy Italian Chicken
Ingredients
4 boneless skinless chicken breasts
1 cup low sodium chicken broth
1 teaspoon minced garlic
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup heavy cream (see notes above)
1/3 cup roasted red peppers
1 1/2 tablespoons corn starch
1 tablespoon basil pesto
Instructions
Place chicken breasts in the bottom of the Instant Pot. Add broth and sprinkle with garlic, Italian seasoning, salt and pepper.
Place lid on the Instant Pot and turn valve to sealing. Select Manual, high pressure (the default), and set the timer to 8 minutes. The pressure cooker will take about 10 minutes to build pressure and begin counting down.
Once the cook time is over, turn the Instant Pot off and let pressure release naturally for 5 minutes, then do a quick release and open the lid.
Remove the chicken breasts and place on a cutting board or serving platter. Turn the Instant Pot to saute. (OPTIONAL: strain the broth if there is fat or unappetizing chunks left over)
Stir together cream, red peppers, corn starch and pesto and add to the pot. Whisk and cook for 3-4 minutes, until thickened. Add chicken back to the sauce or serve with the sauce over top if desired.
Prep Time - 10 minutes
Cook Time - 8 minutes
Total Time - 18 minutes
Servings - 4 servings

Lemon Bars
2 c flour
1 c butter or oleo
1/2 c powdered sugar
Blend above ingredients with fingers. Press into 9 x 13 pan. Bake 15-20 min. @ 350 degrees.
4 eggs
2 c sugar
6 T lemon juice
4 T flour
1 t baking powder
1/4 t salt
Beat four eggs. Add remaining ingredients and pour over hot baked crust. Bake an additional 25 min. @ 350 degrees. Sprinkle the top with powdered sugar after baking.
Scavenger Hunt
Rules of the Game:
No more than three items per house.
Game participants’ homes are off limits.
No phone calls - a phone may only be used as a camera.
No cars - the hunt is played on foot.
Your team must stay together at all times.
If a neighbor doesn’t want to part with an item, please take a picture of the neighbor with the item.
You have one hour to collect the items.
One point for each item.
The first team returning to home base with all the items wins. If no team gathers all the items, the team with the highest number of points at the end of one hour wins.

Peanut Butter Cup Cookies
Ingredients
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped
Directions
Preheat oven to 375 degrees F (190 degrees C). Sift together the flour, salt and baking soda; set aside.
Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well. Shape into 40 balls and place each into an ungreased mini muffin pan.
Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Easy Fancy Crab Dip
1 8 oz. carton of regular cream cheese
1 8 oz. carton of chive & onion cream cheese
4 oz. of sour cream
2 cans crab
Worcestershire sauce
Lawry’s seasoning salt
garlic powder
sugar
1 cup sharp cheddar cheese
2 cups grated parmesan cheese (divided)
Using the microwave in 30 second increments, melt together the two cartons of cream cheese and the sour cream. Add in crab. Add several dashes (approx 2 T) of Worcestershire sauce. Add Lowery’s, garlic powder, and sugar (approx one T) to taste. Stir in cheddar cheese and one cup of parmesan cheese. Pour into greased baking dish. Top with additional parmesan cheese.
Bake at 350 degrees for 15-20 minutes, or until it’s hot and bubbly. Serve with blue corn chips.

Egg Roll In A Bowl
1 lb. ground turkey breast can substitute with ground chicken, ground beef, or ground pork
1 sweet onion diced
1 tablespoon toasted sesame oil*
1 tablespoon rice vinegar
2 teaspoons minced fresh garlic**
1 teaspoon ground ginger
¼ cup less sodium soy sauce
1 (16 ounce) bag coleslaw mix
½ cup grated or “matchstick” carrots
2 green onions thinly sliced
Salt and pepper to taste
1 tablespoon hoisin sauce (optional)
Instructions
Heat a large skillet over medium-high heat. Add ground meat and cook, stirring, until no longer pink. Drain; return meat to skillet.
Add diced onion, sesame oil, and rice vinegar to the skillet. Cook, stirring, for a few more minutes (until onion is tender).
Add garlic, ginger, soy sauce, hoisin sauce (optional), coleslaw mix, and carrots to the skillet. Cook, stirring, for about 5-7 more minutes, or until cabbage is wilted.
Remove skillet from the heat. Stir in green onions and season with salt and pepper, to taste.

Caramel Brownies
INGREDIENTS
1 box german chocolate cake mix
14 oz package Kraft caramels, about 45
10 oz can evaporated milk, divided
¾ cup butter melted
2 tablespoons flour
12 oz semi sweet chocolate chips (I use jumbo)
½ cup chopped pecans (optional)
INSTRUCTIONS
Preheat the oven to 350. Grease a 9x13 pan and set aside.
Melt the caramel and ⅓ cup evaporated milk and stir in a small saucepan over low heat until melted and incorporated.
In a mixing bowl combine cake mix, ⅓ cup evaporated milk, melted butter and flour. Press half of the mix into the 9x13 inch dish and bake for 6 minutes.
Remove pan from oven and sprinkle chocolate chips over the top and pour the caramel over the chocolate chips.
Top with the remaining brownie batter on the top of the caramel and bake for an additional 15-18 minutes.
Remove from oven and let cool completely so that the caramel can set. I also find that if you let it cool and place in the fridge it helps to set up right before cutting.

Dorito Pie
1 lb. lean ground beef
1 package taco seasoning
1/2 cup water
1 tube crescent roll dough
1 cup sour cream
1 cup shredded pepper jack cheese
3 cups crushed Doritos, divided
1/4 cup salsa
1/4 cup melted butter
Preheat oven to 400 degrees.
Brown ground beef over medium heat until no pink remains. Drain any fat.
Stir in taco seasoning and water and simmer until thickened (about five minutes).
Spray a 9" pie dish with nonstick cooking spray. Separate the crescent dough into triangles and line the pie pan placing the points towards the center of the dish. Press the seams to seal.
Sprinkle 1 1/2 cups of crushed Doritos onto the crescent crust. Top with ground beef.
Combine sour cream and salsa. Spread over the ground beef layer.
Top with cheese and remaining Doritos. Drizzle with melted butter.
Bake 20 minutes or until the crescent crust is golden brown.

Sonja's Hot and Spicy Artichoke Dip
1 cup Miracle Whip
1 pkg. shredded Parmesan cheese (divided in half)
1 can marinated artichokes, drained and chopped
1 can Rotel green chilies and tomatoes
2 tbsp. green onions (optional)
Mix all ingredients together and pour into greased 9-inch pie plate. Sprinkle second 1/2 of Parmesan cheese on top. Bake at 350 degrees for 20 minutes or microwave 7 minutes.

Crescent Roll Dough
2 mozzarella cheese sticks cut into 4 even pieces
Pasta or Pizza Sauce
32 piece of pepperoni
Italian Herbs
Heat oven to 350 degrees. Spray muffin tin with non stick spray. Open your crescent dough and lay each triangle over an open muffin space. Add one teaspoon of pizza/pasta sauce to each triangle. Add two pieces of pepperoni, then one piece of cheese, followed by 2 more pieces of pepperoni to cover it. Wrap each triangle over and fold into a ball. Sprinkle with herbs. Bake for 8-10 minutes or until golden brown. Serve with an additional side of warm pasta sauce.

Hash Brown Breakfast Casserole
1 lb. bacon
5 large eggs (or 1 1/4 c. egg substitute)
1/4 c. milk
3 c. country-style hash browns, thawed
1/3 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. shredded cheddar cheese, divided
Preheat oven to 350 degrees. Grease a 9-in pie plate or quiche dish. Cook, cool, and crumble bacon. Set aside. In large bowl, beat eggs and milk. Stir in potatoes, onion, salt, pepper, 1 c. of cheese and 1/2 of the bacon. Pour into dish. Bake for 25-30 minutes or until center is set. Sprinkle remaining cheese and bacon on top. Bake for another 4-5 min or until cheese has melted. Serves 8.

Christine - Browned Butter Toffee Cookies (recipe below), McAlister's Deli
Peanut Butter Blossoms
1 3/4 c flour
1 tsp soda
1/2 tsp salt
1/2 c sugar
1/2 c brown sugar
1/2 c margarine
1/2 c peanut butter
1 egg
2 T. milk
1 tsp vanilla
48 milk chocolate candy kisses
Blend shortening, sugars and peanut butter. Add egg, milk, vanilla and mix. Blend in soda, salt and flour. Chill for at least an hour or overnight. Shape into balls using rounded teaspoon. Roll in sugar, place on ungreased cookie sheet. Bake at 375 for 10-12 min. Remove from oven. Top each cookie immediately with kiss, pressing down lightly so edges of cookie cracks.
Brown Butter Toffee Cookies
1 cup unsalted butter
1 cup brown sugar
2/3 cup white sugar
2 eggs room temperature preferred
1 ½ teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup milk chocolate toffee pieces (Like Heath Milk Chocolate Toffee Pieces)
sea salt for sprinkling
Preheat oven to 350F (177C) and line cookie sheets with parchment paper. Set aside. Cut your butter into Tablespoon-sized pieces and place in a medium-sized saucepan. Melt over medium-low heat.
Browning the Butter (It's easy, I promise!)
Once butter has melted, increase heat to just above medium heat. Swirl and scrape the sides of the pan frequently with a wooden spoon or heatproof spatula - the butter will bubble and pop. Once the bubbling/popping slows, the butter will begin to turn brown. Watch the butter very carefully at this point, and once it begins to brown and you smell the nutty aroma of browned butter, remove from heat quickly and pour into a large, heatproof bowl. Allow b utter to cool for 25-30 minutes before proceeding with the recipe.
Cookie Dough
Add sugars into cooled browned butter, stir well. Stir in eggs, one at a time, stirring well after each addition. Add vanilla extract and stir.
In a separate, medium-sized bowl, whisk together flour, cornstarch, baking powder, baking soda and salt. Gradually add flour mixture to butter mixture, stirring until ingredients are nearly completely combined.
Add milk chocolate toffee bits and stir until ingredients are well-incorporated.
Drop by heaping, rounded 1 1/2-Tbsp scoops onto prepared cookie sheets, placing at least 2" apart.
Bake on 350F for 10-12 minutes or until edges are just beginning to turn golden brown (cookies should still be quite soft when you remove them from the oven, and may even appear slightly underbaked in center). Sprinkle lightly with sea salt.
Allow cookies to cool on baking pan for about 3 minutes and then use a spatula to gently scoop beneath them and carefully wiggle them free from the parchment paper, as the toffee tends to stick. Allow to cool several more minutes and then transfer to cooling rack to cool completely.

Apple Crisp
Preheat oven to 350 degrees.
Fill a 13x9 dish with cut up apples, peeled.
Sprinkle with about 1/3 c sugar and some cinnamon.
In a bowl, combine equal parts brown sugar, oatmeal, flour, and half as much butter or margarine (I usually use 1 cup sugar, oatmeal, etc.).
Mix together with fingers.
Pour over apples.
Sprinkle with more cinnamon.
Bake for 25 minutes or until topping is just barely turning golden. YUM! #itsfallyall

1 c. white corn syrup
1 c. sugar
1 c. creamy peanut butter
1 t salt
6 c. Rice Krispies
Bring corn syrup and sugar to a boil on medium heat. Remove from heat, add peanut butter and stir until melted. Add Rice Krispies and pour mixture into a greased 9x13 pan and press evenly. Let cool.
Frosting
1 c. semi-sweet chocolate chips
1c. butterscotch chips
Combine both types of chips in a small sauce pan and melt over medium heat. Once melted, pour evenly over bars and let cool.
Once cooled, cut, serve and enjoy! Makes approx 24 bars.

Here's the Iowa Girl Eats Homemade Chicken Noodle Soup recipe Stacey shared for an easy weeknight meal.
Stacey's Homemade Chicken Noodle Soup from Iowa Girl Eats
1 Tablespoon butter
2 teaspoons olive oil
1/4 onion, finely chopped
1 large carrot (or 10 mini carrots), thinly sliced
1 rib celery, chopped
salt & pepper
2 garlic cloves, minced
2 chicken breasts, shredded or cubed
46oz chicken broth*
8 oz frozen egg noodles
Directions:
Melt butter and olive oil in a large soup pot over medium heat. Add onions, carrot, celery, salt & pepper, and saute for 8-10 minutes or until soft. If you feel like you need to add more oil, add a splash of chicken broth instead and cover the pot with a lid so veggies can steam.
Add in minced garlic and saute for 1 minute, stirring constantly.
Add chicken and chicken broth, turn the heat up to high and bring the soup to a boil. Add egg noodles and cook for 20-25 minutes, or until noodles are tender. Serve and enjoy! (Serves 6.)
*If pre-making, let cool then refrigerate. You may need to add in
an additional can of chicken broth when re-heating as the egg noodles will have soaked up some broth.
Christine's Easy Enchiladas
1 lb ground beef
1 t minced garlic
salt and pepper to taste
Onion - optional
1 - 19 oz can of enchilada sauce
8-10 flour tortillas
2 c shredded cheddar cheese
Brown ground beef with garlic, salt and pepper (onion, if desired). Drain fat from beef and add 1/3 can of enchilada sauce. Remove from heat and add 2/3 c cheese to beef mixture and let melt.
Spoon 1/4 c of beef/cheese mixture into a flour tortilla, roll, and place in a greased 9x13 pan. Continue adding tortillas until beef/cheese mixture is gone (approx. 8-10 tortillas). Pour remaining enchilada sauce over tortillas and bake at 375 degrees for 20 min. Top with remaining cheese and return to oven for 5 min or until cheese is melted.
Serve with sour cream and salsa. Great warmed up! (Serves 6-8.)
Sarah's One-Skillet Lasagna
1 1/4 c. ricotta cheese
1/4 c. water
1/2 tsp. salt
1/4 c. grated Parmesan
1 1/2 c. shredded Mozzarella
1 lb. ground beef
1 medium zucchini, diced
1 (26oz.) jar pasta sauce
6 oven ready lasagna noodles
In medium bowl, mix ricotta and next four ingredients. Set aside. Brown beef in large saucepan/skillet, add zucchini and stir in 2 c. sauce. Reduce heat to medium low. Top w/two noodles in center. Break two more noodles to fill edges. Spread cheese mixture on top - cheese will hold down curling edges of noodles. Lay on remaining noodles. Pour in rest of pasta sauce and spread evenly, then sprinkle on remaining mozzarella. Cover and simmer over med-low heat until noodles are tender - about 20 minutes. Remove skillet from heat and cool for 5 min. Cut into squares and serve! (Serves 6.)
Tiffany's Energy Bites
1 cup (dry) oatmeal (I used old-fashioned oats)
2/3 cup toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seeds
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey or agave nectar
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25 balls.

One-Pot Mexican Beef and Rice Casserole
INGREDIENTS:
1 tablespoon olive oil
1 pound ground beef
1 onion, diced
2 cloves garlic, minced
1 (1.25-ounce) package taco seasoning
1 cup rice
1 cup vegetable broth
1 (15-ounce) can black beans, drained and rinsed
1 (10-ounce can) Ro*Tel® Mild Diced Tomatoes & Green Chilies
1 cup corn kernels, frozen, canned or roasted
1 teaspoon chili powder
1/2 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves
1 1/2 cups shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1 Roma tomato, diced
DIRECTIONS:
Heat olive oil in a large skillet over medium-high heat. Add ground beef, onion and garlic. Cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat. Stir in rice, vegetable broth, beans, Ro*Tel®, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 16-18 minutes. Stir in lime juice and cilantro. Remove from heat and top with cheeses. Cover until cheese has melted, about 2 minutes. Serve immediately, garnished with tomato, if desired.

Dill Oyster Crackers
2½ tablespoons freshly chopped dill (or 1 teaspoon dried)
¼ cup vegetable oil
1 16-oz. box oyster crackers
1 1-oz. packet ranch salad dressing
¼ teaspoon lemon pepper (optional), and/or garlic powder
Directions
Preheat the oven to 250°F. In a small bowl, add the oil, ranch packet, dill, and lemon pepper and/or garlic powder. Stir until mixed through. In a 1-gallon-size resealable bag, add the crackers and oil mixture. Seal the bag and toss until well-coated. Arrange the crackers on an ungreased half-sheet pan in a single layer. Bake the crackers for 15 to 20 minutes or until golden.

Zuppa Tuscana Soup
1 lb Italian sausage
6 slices of bacon
1 medium onion
2-3 cloves minced garlic
1 quart water
2 T chicken bouillon granules
2 medium potatoes cut into 1/4" slices
2 cups shredded kale
1/8 t. red pepper
1/3 c. heavy cream
Brown sausage. Brown bacon, reserving 1 T bacon fat. Saute onion until soft in bacon fat. Add garlic and cook one minute. Add water, chicken bouillon, and potatoes. Bring to boil, cover, and then simmer for 15 minutes. Add meats, kale, red pepper and cook for four minutes. Stir in cream and heat through without boiling.

Chocolate Texas Sheet Cake
Cake
2 sticks butter
4 T cocca
1 C water
2 C flour
2 C sugar
1 tsp vanilla
1/2 C 2% milk
2 eggs, beaten
1 tsp. soda
Combine first three ingredients in saucepan and heat until boiling. In separate bowl, mix flour and sugar together. Pour boiling ingredients over flour and sugar mixture and beat well. Add vanilla, milk, eggs and soda; beat well. Pour mixture info a greased jelly roll pan and bake at 375 degrees for 20 minutes.
Frosting
1 stick butter
4 T. cocoa
6 T. milk
1 lb. powdered sugar
1 tsp. vanilla
2/3 C. walnuts, chopped (I never add these)
Five minutes before cake is done, make the frosting. Melt the butter and combine with cocoa and milk, bringing mixture to a boil. Add powdered sugar and vanilla and mix well, adding the walnuts last. Spread over warm cake.

Cheese Soup
32 oz. chicken broth
16 oz. frozen California blend vegetables (cauliflower, broccoli, and carrots)
2 c. hashbrown potatoes
16 oz. (1 lb) Velveeta
10 3/4 oz (1 can) cream of chicken soup
Bring broth and veggies to a boil. Add potatoes and simmer for five minutes. Add Velveeta and can of soup. Mix until well-blended and thick, stirring frequently to avoid scorching.

LEMON DILL SOUP
2 cups chopped onion * 1 cup chopped celery * 1 cup chopped carrots * olive oil * 3 clove garlic, minced * 6 cups chicken broth * 1/2 cup brown rice * 2 cups chicken, cooked and shredded * 1/4 cup juice from fresh lemons * 4 sprigs fresh dill, finely chopped * salt & pepper
In a Dutch oven, sauté the onion, celery, and carrots in about 1/4 cup olive oil (I also added a couple tablespoons of butter) until soft, then add garlic. Stir well, then add broth (I used 8+ cups broth) and rice (I used 1 1/2 cups wild brown rice which is why I added more liquid). Allow rice to cook most of the way through (this took about 40 minutes). Five minutes before rice is cooked through, add chicken (this is an option but makes a hearty, stand-alone meal), and lemon juice (doubled this too) and dill (I used the whole bag provided which was about 2 tablespoons chopped). Add salt and pepper to taste.
HOMEMADE HOT CHOCOLATE MIX
1 (12 qt.) box of instant nonfat dry milk * 2 lb. container of Nestle Quik * 1 (10 oz.) jar of powdered coffee creamer * 1 lb. of powdered sugar
Mix all the ingredients together and store in an airtight container. Stir 1/3 cup of mix into 8 oz. of hot water. Add more powdered mix to taste.

Overnight Coffeecake
2 c flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
2/3 c margarine
1 c sugar
1/2 c brown sugar
2 eggs
1 c buttermilk or sour milk
Topping:
1/2 c brown sugar
1/2 c nuts
Mix dry ingredients in a small bowl and set aside. In a large bowl, mix remaining ingredients. Slowly add dry ingredients to mixture. Pour into a greased 9x13 pan. Sprinkle topping over all. (I leave the nuts out and add a bit more brown sugar.) Leave on counter overnight. Do not refrigerate. Bake at 350 degrees for 30-35 minutes.

Cheese Coins
2 c flour
1 t. paprika
1 t. salt
1/2 t. cayenne pepper
1 c. chilled, unsalted butter, cut into pieces
1 c. grated sharp, white cheddar cheese (more, depending on how finely grated the cheese is)
Combine flour, salt, paprika and pepper in food processor fitted with metal blade; pulse to combine. Add butter; pulse until mixture resembles coarse meal. Add cheese; process until dough starts to come together. Turn dough onto a lightly floured surface; knead a few times. Divide into 4 equal pieces and roll into logs, each about 6 inches long. Wrap in plastic; refrigerate until firm, at least 1 hour or up to 3 days. (Can also be frozen.)
Preheat oven to 350. Line baking sheets with parchment. Cut dough into 1/3” thick slices and place about 2” apart on sheet. Bake until browned, about 15-20 min (watch closely). Remove from oven, let cool and transfer to wire rack to cool completely. They freeze really well.
Rosemary Cheese Coins:
eliminate paprika and cayenne
add heaping tsp. of dried, crushed rosemary
sprinkle kosher salt on top of baked coins and lightly press w/finger

Note: this recipe makes A LOT of dip and can easily be cut in half with plenty to enjoy!
12 ounces cream cheese
1 cup confectioners’ sugar, unsifted
1 cup sour cream
1 (7-ounce) jar marshmallow cream
2 teaspoons vanilla extract
2 teaspoons almond extract
2 teaspoons cinnamon
2 tablespoons cognac (optional)
In small bowl, cream the cheese until soft and smooth. Add the confectioners’ sugar and beat until well blended. Add the sour cream and the rest of the ingredients. Blend just until well combined. Cover and chill several hours before serving.

Frozen Fruit Salad
1 17 oz can apricots
1 17 oz can crushed pineapple
1 c liquid from the canned fruit
1/2 c sugar
3 10 oz pkg. frozen strawberries
1 6 oz can frozen OJ
2 T lemon juice
3 diced bananas
Drain apricots and pineapple, reserving liquid to make 1 cup. Heat liquid and sugar until sugar dissolves. Add strawberries and juice. Cut up apricots and bananas. Add. Spoon into cupcake papers in muffin tins. Place tins in freezer. Remove from freezer 20-30 min before serving. Makes 30 or more servings.

Pumpkin Chocolate Chip Muffins
4 eggs
2 C sugar
1 15 oz can pumpkin
1 1/2 c vegetable oil
3 c flour
2 tsp. baking soad
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 12 oz pkg chocolate chips
Mix all dry ingredients in a bowl. Mix eggs and sugar lightly. Add oil and pumpkin. Add dry ingredients to pumpkin mixture; stir only until well mixed. Add chocolate chips. Spray muffin tins or line with papers. Makes 24 standard muffins. Bake at 400 for 20 minutes.
If you want a healthier version, I put in 3/4 c oil and 3/4 c applesauce. Or, substitute 1 1/2 c applesauce for all the oil. YUM!

Slow Cooker Chicken and Corn Chowder

Hamburgers for a Crowd (Grandma Sims)
2 lb hamburger
1/2 c barbecue sauce
1 c tomato juice
1 tsp. salt
1/2 c brown sugar
1/4 c vinegar
2 T chopped onion or onion salt
1/2 c chopped celery or celery salt
Brown hamburger, add all other ingredients. Simmer for one hour. Add quick-cooking oatmeal to thicken if needed.
Manicotti with Cheese Filling (Judy Walsten)
1 box manicotti
8 oz. shredded mozzarella cheese
one 15 oz. container ricotta cheese
1/4 c. grated parmesan cheese
2 T. chopped fresh parsley
1/2 tsp. salt
1/4 tsp. pepper
32 oz. jar spaghetti sauce
Cook manicotti according to directions on package, drain. Cool in single layer on wax paper or aluminum foil to prevent manicotti from sticking together. Combine cheeses, parsley, salt and pepper for filling; spoon into manicotti. Spread thin layer of sauce on bottom of 9x13” baking pan; arrange manicotti in single layer over sauce. Cover with remaining sauce. Cover with aluminum foil; bake at 350 degrees for about 40 minutes. Remove foil; bake 15 minutes longer.
Pannekoeken (Rosalie Altena)
Preheat 3 qt. baking pan in 425 degree oven (pan must have straight sides, not higher than 3”)
Blend 4 eggs for 1 minute on high in blender
Take pan from oven, add 3 T butter, return to oven to melt
Slowly add 1 c milk through top of blender
Slowly add 1 c flour through top of blender
Blend 30 more seconds
Remove hot pan from oven
Immediately pour blended batter into hot pan
Bake for 20-25 minutes: Pannekoeken will rise and brown slightly
Serve with powdered sugar sprinkled on top. Or try savory toppings like cheese, mushrooms, peppers, etc.
Christine's Go-To Dinner Recipes
Taco Soup
1 lb ground beef
1 chopped onion
1 can kidney beans (drained and rinsed)
1 can black beans (drained and rinsed)
1 can diced tomatoes with green chilis (Ro-tel)
2 can regular diced tomatoes
1 can corn (drained)
2 packets of ranch dressing mix
1 packet of taco seasoning mix
water
Brown ground beef and chopped onion. Drain fat. Combine with remaining ingredients in large stock pot or crock pot. Add water until it reaches the consistency you prefer. Bring to a boil and then simmer on med-low heat until heated through (20-30 min). We top with corn chips and serve with cornbread.
Easy Chicken Stir Fry
1 lb chicken breast (cut into bite-sized pieces)
1 package frozen stir fry vegetables
1/3-1/2 c. stir fry sauce
Cook chicken on medium heat until no longer pink. Add stir fry sauce to coat. Combine with vegetables and toss until veggies are cooked through. Serve on rice.
Turkey Meatloaf
1 lb. ground turkey
1 egg
1/2-sleeve of saltine crackers (crushed) or 1 c of bread crumbs
1 t salt
1 t pepper
1 can cream of chicken soup
1/2 c. milk
Combine ground turkey, crackers/bread crumbs, egg, salt and pepper. In separate bowl, mix soup and milk to create a sauce. Add 1/3 of the sauce to the turkey mixture and mix thoroughly.
Pour turkey mixture into greased, small glass casserole dish or bread pan. Top with remaining sauce.
Bake at 350 degrees for 45 minutes. Serve with rice. (We like to spoon the sauce over the rice.)
